The process of crafting this exceptional coffee begins with the precise reception and weighing of freshly harvested coffee cherries. This is followed by meticulous classification, where floating cherries are removed using water recirculation, and ripe cherries are separated from underripe and overripe ones. To ensure the highest quality, an additional electronic selection is carried out to carefully remove any defective beans. The coffee cherries are then dried using a traditional natural method, which takes 20 to 25 days. The entire process is closely monitored, with the temperature kept below 40°C. The cherries are carefully stirred throughout to achieve uniform drying and to preserve all the precious aromatic qualities of the coffee.
