Santa Monica – Castillo

Description

This coffee was produced by Jairo Arcila on the Santa Mónica farm. The coffee has been carefully hand-picked to select only the ripest cherries. The coffee was then kept in an aerobic environment for 24 hours before being stored in Grainpro bags for 200 hours for further fermentation. The whole cherries were then dried in the sun on raised beds until the ideal moisture content was reached.
