Produced by Edwin Noreña at Campo Hermoso, this Sudan Rume undergoes an innovative Black Honey Mossto Lactic fermentation enhanced with Enigma hops. Carefully selected cherries (20°+ Brix) are first fermented under low oxygen before a 72-hour carbonic maceration. The collected mossto is inoculated with a proprietary lactic culture and Enigma hops, then reintroduced during a second 72-hour fermentation after pulping to Black Honey. Slow greenhouse drying preserves the coffee’s vibrant aromatics and sweetness, resulting in an intensely expressive cup with layers of tropical fruit, floral notes and syrupy complexity. This lot was selected by both the Australian Brewers Cup Champion and the Colombian Brewers Cup Champion for their winning Brewers Cup presentations, highlighting its world-class quality and exceptional competition performance.
